OK some of you food geeks won't like this but I can't please everyone.

It was cold today, I wanted to make a hot lunch but didn't have time to cook and I was all out of canned soup. What's a girl to do? 

I dug out a couple of cans of Chef Boyardee Beefaroni, dumped them into a baking dish, added some of my homegrown dried Oregano and Basil plus a chopped fresh garlic clove. Mixed it all up and put it in the microwave for 4 minutes. Took it out, covered the top with fresh grated Parmesan cheese and ran it under the broiler until it was brown and bubbly. 

I served it with a Romaine and cherry tomato salad and Sourdough bread that I had in the fridge (heated up of course). The whole thing took less than 20 minutes from can to table!
